Dear Santa, Cheese Please
Dear Santa,
I have always loved cheese. The first dish I ever made was macaroni and cheese. By the time I was 12, I was well on my way to becoming a mac & cheese connoisseur. My repertoire consisted of mostly powdered cheese and velveeta for many years. As an adult I became familiar with Brie, Gouda, Havarti, Gorgonzola, feta, bleu and goat cheeses.
Last year on a trip to Disney World with the kids, we stayed at Disney’s Wilderness Lodge. Since I live with 5 artists, (I feel the headache coming on now) it seemed appropriate that we dine at Artist Point a nice restaurant in the Wilderness Lodge. Our meal there was the best we had on that Disney trip. They had the cutest “decorate your own” dessert for the kids, and I was blown away by their sampling of cheeses. I branched out into the gourmet cheeses and loved it.
This year we won’t be able to make it back to Disney in January. Tissues please. In order to boost my spirits, I thought I would add to my Christmas wish list some scrumptious cheeses from Williams-Sonoma. In my dreams, I would receive the Artisanal 3 months of Cheeses. Swoon! But if not, I could certainly make due with Neal’s Yard Farmhouse Cheese Collection. You have to see the video about Neal’s Yard and their business over in London. It is fascinating. They travel around the UK meeting farmers, building relationships, and selecting artisan cheeses for their shop. The Blue Stilton cheese from Colston Bassett, really caught my fancy. It is made specifically for Neal’s Yard. Up until now, my only experience with anything Stilton has been my son’s books like Christmas Catastrophe (Geronimo Stilton) about the proper little mouse who is always getting into trouble.
I hope to get the chance to try some new cheese, Santa. I’ve been really good this year, and I promise to leave some cookies and carrots for you and the reindeer. Thanks!

Katy,
I don’t see Asiago cheese on your list. You must must try Asiago. It will make you abandon all other cheeses for it is the Queen of Cheese. I can’t ever get enough of it. I hope Santa brings you heavenly cheeses.

a friend of mine was the cheesemaker at sweet grass dairy in georgia. omg. i mentioned my love of aged cheese to her, and my confusion about the rules about raw cheese.
so she sent me two cheeses, one raw and one pasteurized, but the same kind of cheese. both were incredibly delicious, totally divine. but the raw one had the most amazing creamy texture–completely different from the other one.
i miss when she was working there and sending me goodies. now i have whole foods cheese in my life (oohhhhhhh aged raw extra sharp cheddar, how i love you), but it doesn’t compare to having an artisanal cheese connection.
